About the Recipe
This is an incredibly flavoursome salad – the surprise of the dressing blends perfectly with the crunchiness of the veg.
Ingredients
½ head of purple cabbage
1 small fennel bulb**
2 tbsp Miso
1 tbsp. Dijon mustard
1 tbsp Tahini
1 tbsp Maple Syrup or Honey
1 tbsp. extra virgin olive oil
1 tbsp. white wine vinegar
½ tsp. chilli flakes

Preparation
Prepare the dressing. Mix the miso, tahini, maple syrup, mustard, vinegar, olive oil and chilli flakes into the bottom of the bowl.
Shred the cabbage and the fennel bulb on a vegetable mandoline.
Add to the bowl and mix with the dressing.
